Chicken Broth, vegetables and Pastina Pasta makes this Legendary Italian Soup one of the great Italian Comfort Foods.
Ingredients
6 cups Chicken or Vegetable Broth2 large carrots, rough chopped2 Stalks Celery, rough chopped1 medium sized onion, rough choppedSmall rind of Parmesan or Romano Cheese (Optional)1 - 1½ cups small pasta (I used Pastina). If you want more broth, start with a cup of pasta. If you want less broth use 1½ cups pasta.Salt and Pepper to taste Parmesan or Romano on the side as needed.
Instructions
Add the 6 cups of Chicken/Vegetable broth into a stick pot, add the rough chopped carrots, celery, onion and Parmesan/Romano rind. Bring to a boil, reduce heat source to a high simmer and cook until vegetables are soft. When vegetables are soft (Discard the brine) remove with a slotted spoon (Make sure to reserve broth) and puree in a blender or food processor, and return to broth.Taste for seasoning, bring back to a boil, add the pasta and cook per package instructions to al dente. Serve hot with Parmesan/Romano on the side.
